About Me
Well,let's see....I am 38 years young, have a wonderful husband of 14 years this year, have been with him for almost 20 years! We have two very active boys 8 and 4. I am originally from the UK and have been here now for 21 years. I have a fitness crazy for a brother in the UK, and miss him a lot. I also have 3 nieces and nephews back home. I love to workout when I can, which I aim for 4 times a week for 1-1 and a half hours. (sometimes that doesn;t happen, but I try)! I love to workout with weights, but have a long way to go to my ultimate goal (which is a secret shh...)

Favorite Recipe
Well, I have quite a few, but here is one I love:
BAKED ZITI
½ LB SKINLESS BONELESS CHICKEN BREASTS, CUT UP INTO STRIPS (ABOUT ¼”) or try ground turkey!
1 ONION, CHOPPED
2 GARLIC CLOVES MINCED
ONE 28OZ CAN TOMATOES, CRUSHED
1TSP ITALIAN HERB SEASONING
¼ TSP GROUND BLACK PEPPER
2 CUPS ZITI OR PENNE PASTA (wheat)
2/3 CUP NONFAT RICOTTA CHEESE(OR I USED COTTAGE CHEESE)
1/3 CUP SHREDDED PART SKIM MOZARELLA CHEESE
2TBSP GRATED PARMESEAN CHEESE
SPRAY LARGE NONSTICK SKILLET WITH SPRAY: HEAT. ADD THE CHICKEN AND COOK TURNING AS NEEDED UNTIL LIGHTLY BROWNED. 5-6 MIN. TRANSFER TO PLATE.
PRE-HEAT OVEN TO 375 DEGREES
SPRAY THE SAME SKILLET AGAIN, ADD ONION & GARLIC, COOK UNTILL SOFTENED STIRRING AS NEEDED (ABOUT 5 MIN)
ADD TOMATOES, SEASONING, BRING TO A BOIL, REDUCE HEAT AND SIMMER UNCOVERED UNTIL THE MIXTURE IS THICKENED SLIGHTLY. (8-10 MIN)
MEANWHILE, COOK ZITI ACCORDING TO DIRECTIONS, DRAIN AND MIX WITH RICOTTA CHEESE.
POUR HALF OF THE TOMATO MIXTURE INTO A 13X9 BAKING PAN. LAYER WITH THE ZITI MIXTURE, THE CHICKEN AND THE REMAINING TOMATO MIXTURE. SPRINKLE WITH THE CHEESES.
BAKE UNTIL HOT AND BUBBLING.
