For a guy pushing 40 years old, I'm happy with my body. That's not to say I don't dream of the days when I was 25 and lean & mean. I'm always striving to be in better shape, but I don't make being at the pinnacle of fitness my priority anymore.

At our annual Lifeguard Recertification in May 2008, I posted the fastest brick retrieval time of all the lifeguards. The other, younger lifeguards weren't slow, I WAS JUST THAT FAST!

Favorite Recipe
Italian Chicken & Pasta

Ingredients: boneless, skinless chicken breast; italian salad dressing; spiral pasta; Birdseye Steam Fresh mixed vegetables

- Take 2 boneless, skinless chicken breast halves
- Thoroughly clean and remove extra fat
- Place in large bowl and cover with any Italian salad dressing. Let it sit for 1 to 2 hours.
- After chicken has marinated for 2 hours, heat up a grill. Also fill a pot with water and bring to a boil to cook the pasta.
- Pour pasta into boiling water and put the chicken on the grill. Both should take similar time to cook...approximately 12 minutes.
- With 4 minutes left to cook chicken, put the bag of Birdseye Steam Fresh mixed vegetables in the micorwave and turn it on for 4 minutes.
- Check pasta. If it is cooked, remove from heat and drain. Dump pasta in a large serving bowl.
- Check chicken. If it is cooked, remove from heat and place to the side to be served.
- After 4 minutes in the microwave, remove the mixed vegetables and pour them into the large serving bowl with the pasta. Mix together. Pour some Italian salad dressing over the pasta and vegetables and mix thoroughly.
- Scoop out pasta/vegetable mix onto plate. Place 1 chicken breast half on top of pasta. Serve.
